Our Approach to Food
At Nova Joe’s, we believe food should be made with care, intention, and respect for the people we serve.
Our goal is simple. Serve food we are proud of, made by people we value, in a way that makes today better for our guests and our community.
Running a quick service restaurant comes with real world constraints, but we also believe those constraints should never stop us from making thoughtful choices.
Ingredients Matter to Us
We care deeply about what goes into our food and how it is prepared.
That is why we cook our chicken and fries in beef tallow, a traditional cooking oil that has been used for generations. Compared to many modern seed oils, beef tallow is naturally stable at high cooking temperatures and does not rely on industrial processing to perform well in a fryer. For us, that means a simpler ingredient choice and a cooking method we feel good about using every day.
Beyond how it cooks, we believe better ingredients lead to better results. Beef tallow delivers rich flavor and consistency while aligning with our goal of being thoughtful about the ingredients we use.
We understand that every guest has different dietary needs and preferences, and we respect that while remaining transparent about how our food is prepared.
We have also worked intentionally to reduce artificial colors and flavors across our menu wherever possible. Over the past year, this has included bringing back the original Nova Joe’s breading and refining both our food and coffee offerings with the same mindset.
